Sure, here’s one that’s authentic and tasty, and the options for additional ingredients do NOT have to include mushrooms………..and yes, Italians do cook Pork, the real meat mixture of a Sauce Bolognese or ground beef mixtures almost always have ground Pork in them. Chicken Calabrese
This is one of those great mid-week meals for working or busy Moms that can be prepared fairly quickly and put into the oven to bake, leaving you with time to catch up on your chores after a hectic day. This dish consists of tender chicken pieces cooked on a bed of sliced potatoes topped with a vibrant tomato sauce. You can alter the recipe by adding spinach, onions or mushrooms to the casserole, which would create a complete meal in one dish. I would simply place any of these vegetables on top of the potato bed before placing the chicken pieces on top. To complete the meal, I would add a crisp green salad, a loaf of crusty Italian bread, and a nice baked fruit dessert.
1 Boiler/Fryer, Cut Into 8 Pieces (About 3-4 Pounds)
2 Tablespoons Olive Oil
2 Cloves Garlic, Minced
3 to 4 Large Baking Potatoes, Peeled, And Cut Into 1/4 Inch Slices
1 (14 oz) Can Whole Tomatoes, Or 6 Large Ripe Plum Tomatoes
10 Tasty Black Olives, Pitted And Coarsely Chopped
1 Tablespoon Capers, Chopped
1 Teaspoon Dried Oregano
1/4 Cup Fresh Chopped Parsley
Salt & Pepper
Pinch Of Red Pepper Flakes (Optional)
Preheat the oven to 350 degrees F. Rinse the chicken pieces, and then pat dry. Heat the oil in a large skillet over medium heat, and brown the chicken pieces well on all sides. Add the garlic, and saute for a minute or two. Add the garlic, and cook another minute or two. In an ovenproof casserole dish, lightly oil the bottom, and then layer the potatoe slices to cover, seasoning each layer with salt and pepper.
Place the browned chicken pieces over the potatoes. If using canned tomatoes, squeeze the whole tomatoes and place on the chicken pieces with the remaining juice from the can. Season with more salt and pepper, as well as the dried pepper flakes. If using whole plum tomatoes, slice them thinly, and layer over the chicken pieces. Sprinkle the casserole with the olives, capers, and parsley, and cover with a lid or aluminum foil. Bake for about 50 minutes or until the chicken is cooked through.
To serve, place a bed of tender potato slices on each plate, and place a couple of the chicken pieces on top. Spoon some of the tomato sauce on top, and serve hot.

how about boneless skinless chicken breast wrapped in prosciutto, pan fried in oil then finished in the oven? make a reduction sauce out of the fried bits from the frying pan, minus the oil. use chicken stock to mix the crunchies from frying the chicken, add balsamic vinegar, and reduce about 1/4 the total amount.
you can do the same thing with pork tenderloin without the prosciutto. or with beef tenderloin. the sauce is the key, and with the chicken breast, the prosciutto ham is a must

Italians like many other cultures/nationalities cook pork all the time. There’s nothing like a great Bolognese sauce made with pork. Here’s an approach to pork cooked Italian style:
Pork Tenderloin with Garlic & Rosemary
1 small pork tenderloin
3-4 cloves of crushed garlic
1/2 C. of extra virgin olive oil
1 T. of finely chopped fresh rosemary leaves
sea salt & fresh cracked pepper
3-4 medium yellow onions
6-8 small-med. red potatoes
Preheat your oven to 400 degrees. Place your pork tenderloin in an oiled roasting pan. Take a small bowl and combine the olive oil, rosemary & garlic creating a paste of sorts. Rub the paste all over the tenderloin. Next season with some salt & pepper. Cut up the onions & potatoes into quarters. Add them all around the pork tenderloin. Cover the pan with foil. Bake for about 30 min. and then check the meat for doneness by cutting into the thickest part and seeing if the juices run clear. If you need more time, remove the foil and put it back into the oven for about 10 more minutes until the meat is cooked but make sure you don’t let it dry out. When it’s all browned nicely, slice up the tenderloin and plate it up with some of the potatoes & onions.
Note: You can substitute a whole chicken for the pork tenderloin and follow the same process. You can speed up the cooking process though by starting with the chicken already cut into parts.

My favorite is chicken with prosciutto. I pan fry the chicken breast until done. Top with prosciutto and then cover with a couple tablespoons of parm cheese. put a lid on it until it is melted. then it is done. I serve with roasted asparagus.
