I’m looking for recipes to make quick breads and/or hot cocoa or other drink mixes to give as Christmas gifts. Can anyone give me good recipes or links to good recipes? Thanks!

I am a big fan of quickbreads and there are so many. Here’s a few good ones that I have found and will be using this Christmas:
Tropical Mandarin Bread

1/2 cup cooking oil
3/4 cup sugar
2 eggs
1/2 cup mashed ripe banana — (1 – 1 1/2 medium)
1/2 teaspoon almond extract
1 can mandarin oranges — drained (11 oz.)
1 1/2 teaspoons grated orange peel
1 3/4 cups unsifted all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon soda
1/2 teaspoon salt
1/2 cup coconut
1 tablespoon graham cracker crumbs
Blend together oil and sugar in large mixing bowl. Add eggs, one at a
time, beating well after each addition. Stir in banana and almond extract.
Cut oranges into pieces and add to banana mixture. Stir in remaining
ingredients except graham cracker crumbs. Mix well. Grease bottom and
sides of 8×4 or 9×5-inch (1 1/2 qt.) loaf dish. Sprinkle with graham
cracker crumbs; shake out excess crumbs. Pour batter into dish, spreading
evenly. Bake 55 minutes at 325 degrees.
Carrot Nut Bread
1/2 cup corn oil
3/4 cup sugar
1 3/4 cups unsifted flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 cup shredded carrot
2 eggs
1/2 cup chopped nuts
Grease 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan. In large bowl, stir together
corn oil and sugar. Stir together flour, baking powder, salt, and
cinnamon; stir into corn oil mixture. Stir in carrot. Add eggs, 1 at a
time, beating well after each addition. Stir in nuts. Turn into prepared
pan. Bake in 350 degree oven 55 to 60 minutes or until cake tester
inserted in center comes out clean.
Today’s Recipe: Lemon Pistachio Bread
1 3/4 cups all-purpose flour
3/4 cup sugar
2 tsp. baking powder
1/4 tsp. salt
1 cup milk
1 egg, beaten
1/4 cup cooking oil
2 tsp. finely shredded lemon peel
3 Tbsp. lemon juice, divided
1/2 cup pistachio nuts
1 Tbsp. sugar
Directions:
Preheat oven to 350.
Grease the botton and 1/2" up the sides of an 8" x 4" x 2"
loaf pan. Set aside.
In a medium bowl, stir together the flour, the 3/4 cup sugar,
baking powder and salt. Make a well in the center of the dry
mixture. Set aside.
In another bowl, combine the milk, egg, cooking oil, lemon
peel and 1 Tbsp. of the lemon juice. Add the egg mixture all
at once to the dry mixture. Stir just until moistened (batter
should be lumpy). Fold in the pistachios.
Spoon the batter into the prepared pan. Bake for 50 to 55
minutes or until a wooden toothpick inserted near the center
comes out clean.
Meanwhile, stir together the remaining 2 Tbsp. of lemon juice
and the 1 Tbsp. of sugar. Immediately after removing bread
from oven (but while the bread is still in the pan), brush
lemon-sugar mixture over the loaf. Cool in the pan on a wire
rack for 10 mins. Remove loaf from pan and continue to cool
on the wire rack.
: Applesauce Raisin Bread
1 cup applesauce
1/2 cup oil
1/2 cup sugar
1 3/4 cup flour
1 cup raisins
1 egg, slightly beaten
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 cup chopped nuts, optional
vegetable oil spray
Directions:
Preheat the oven to 325 degrees F.
In a large bowl, mix the applesauce, oil and sugar. Add the egg.
Mix well.
Sift together the flour, baking soda, salt, cinnamon, cloves and
nutmeg. Add to the applesauce mixture. Mix well.
Fold in the raisins and nuts (optional).
Pour into a sprayed 8" x 4" loaf pan. Bake for 1 hour and 20
minutes.
Cool on a rack for about 30 minutes.

Do a search for "gifts in a jar" and you will find many sites for all kinds of mixes you can put together in a jar to give as gifts. I would use the type of lids that has the flat lid and the ring then you can cover the flat part of the lid with a square of material then put the ring on. You can print up the directions and tie them around the lid with raffia or a pretty Christmas ribbon..Hope this helps/
